Frank Boon, who started as a blender, is considered by many to be the leading revivalist Lambic brewer in Belgium today. Boon is remarkable for making completely traditional products, and yet having the softest and most drinkable Lambics. Gueuze Girardin 1882 is a traditional geuze made of 100% traditional lambic containing only 15% young lambic which undergoes additional fermentation on the bottle, with a sparkling character like champagne.
